Apple Cookie Snacks with Nutella Crunch

This is a great snack or quick dessert. Make the crunch and keep in an airtight container.

Ingredients

2 Apples of your choice
100 gm Nutella

Crunch

1 cup of mixed nuts like Cashews and natural Almonds
1 cup of mixed seeds like Pepita, Sunflower and Sesame Seeds
2 tablespoons of oil (you can even use a flavoured oil such as lemon or orange)

Method

  1. You’ll need a frypan and a heated grill.
  2. Put the Cashews and Almonds into the food processor and pulse till they break into nice uneven smallish pieces. ( You can do this by putting into a bag and hitting with a rolling pin too)
  3. Pour the seeds and the nuts into the frypan and pour over the oil. Mix with a spoon till well combined. Pop the whole frypan under a hot grill. Stir every two minutes till nicely toasted. Set aside.
  4. Slice the apples into approximately 1 cm thick pieces. Lay flat and make a small circle incision in each to remove core or seeds. Put a ½ teaspoon of nutella onto each slice and push down to spread. Sprinkle each with the crunch and serve. Store remaining crunch till needed again.
